This year Logan City will host it’s Sixth Annual Boo at the Zoo. This annual event is a fundraiser the zoo hosts each October. Families are invited to attend this fundraiser dressed in their best Halloween costumes. Activities that are planned for the day are geared for children ages 3 to 11 years old but every one is welcome to attend. Growing up in my house life seemed to be a never ending whorl wind of things that needed to be done. My parents ran their own business, volunteered in the community, made sure their kids attended school and managed all the other activities that came along with raising a young family. We never really slowed down. Needless to say life was busy.

As Saturday mornings rolled around each week life seemed to pause for a moment. I remember waking up to the sound of Dad’s footsteps coming down the hall to my bedroom. This was my warning, soon he would be knocking on my door, lovingly insisting we get up and going. I knew better than to stay in my bedding cocoon because next time he knocked on the door if we were not up and moving he would hoist us over his shoulder like a flour sack and head outside to the swimming pool. With the California sun just breaking in the desert sky we knew what would be coming next. Many a Saturday morning I enter the kitchen, welcomed by the smells of breakfast being prepared mother and father, my hair soaking wet from my recent dunk. This became a weekend routine. I can still hear Dad saying, “ We making memories.”

Our weekend breakfast has indeed become family time where we share memories. To this day I still love taking the time to have a BIG family breakfast with our kids. Often we are joined by extended family and friends and we are still “making memories.” Each enjoys sharing their favorite breakfast foods and I thought I would share some the recipes with all of you. Through out the month I will post some of my favorite recipes along with other fun breakfast ideas.

This weeks recipe : Orange Blueberry Muffins

Ingredients

1 cup uncooked oatmeal

1 cup orange juice

3 cups all-purpose flour

4 teaspoons baking powder

1 teaspoon salt

1/2 teaspoon baking soda

1 cup sugar

1 cup vegetable oil

3 eggs, beaten

1 1/2 cups fresh or frozen blueberries

1 tablespoon grated orange peel

TOPPING:

1/2 cup finely chopped walnuts

1/3 cup sugar

1 teaspoon ground cinnamon

Directions

Combine the oatmeal and orange juice. Set aside. In a large bowl, combine flour, baking powder, salt, soda and sugar. Make a well in the center of the dry ingredients and add oatmeal mixture, oil and eggs. Stir only until ingredients are moistened. Carefully fold in berries and orange peel. Spoon batter into greased muffin tins, filling about 3/4 full. Combine walnuts, sugar and cinnamon. Sprinkle over muffins and bake at 400 degrees F for 15 minutes or until muffins test done. Remove from tins and serve warm, if desired.

These muffins have become a family favorite. My kids like them better without the topping. They keep well in an air tight container for a few days. I hope you enjoy them as much as we do!

At 3:04 am Summer of 2011 slipped away and we officially entered fall. To bid a sweet goodbye to the season I love, last night I made a fresh peach pie to celebrate. Fresh peaches are one of my favorite things about summer and are a signal that the season is drawing to a close.

As we enter September, I start to watch the roadside fruit stands that line the “Fruit Highway.” Stretching between Perry and Brigham City, UT, this length of country road meanders along the base of the mountains lined with fruit and vegetable stands holding the local farmers harvests of summer. These colorful stands hold a bounty of goodness but my eye looks for the hand painted signs declaring their arrival of the large fuzzy bushels of peaches that seem to call to me as soon as I see the announcement. Elberta peaches are my favorite and this is the time of year they can be harvested. These juicy natural treats also make great fresh peach pie.

I have to say I have Maddox Ranch House to blame for my pie craving. They have a delicious peach pie they serve when the peaches are in season. So if this has sparked your taste buds interest I have included my pie recipe below. (It’s almost as good as Maddox.) Enjoy!

Ingredients

1 9 inch pastry pie shell

1 cup sugar

1/2 cup water

3 TBS cornstarch

1 TBS butter or margarine

2 cups fresh peaches pitted and mashed

1/4 tsp ground nutmeg

1 tsp vanilla extract

4 cups fresh peaches skinned, pitted & sliced

Directions

Step 1. Combine sugar, water, cornstarch, butter, mashed peaches, and nutmeg in a sauce pan. Cook over medium heat until mixture has thickened. Stir in vanilla.

Step 2. Place sliced peaches in a bowl, add above mixture and coat. (I never use all of the glaze because I like it just slightly coated.) Pour peaches into pie shell and refrigerate until set.

When we think of those who are unable to feed themselves and their families, images of starving children in a far away country usually come to mind. However even in the great state of Utah where so many of us are so richly blessed there are individuals and families who struggle to have the food they need. Hunger is a very really problem here in Utah and may even effect someone you know.

The annual income of an impoverished family in Utah is around $22,000 a year. This income usually covers health care cost, shelter, food, and other household expenses. This statistic applies to 1 in 10 of the adults in our state and 1 in 8 of the children. Over 134,000 people in our state are recipients of food stamps. Every day over 60,000 people find themselves in need of a meal and are fed at local soup kitchens. Daily 1 in 7 children are at risk of hunger. In our schools about 40% of our children receive free or reduced school lunch and it may be the only complete meal they eat that day. These statistics paint a picture of the struggle Utah families have to provide themselves with adequate food each day.

The month of September is Hunger Action Month. In an effort to aid those who may be having trouble this year the Utah Food Bank has teamed up with local Utah Walmart stores to hold a food drive this Saturday September 24, 2011. The goal is to raise 1 million pounds of food. Many of us who use the Pinching Your Pennies website and blogs receive great tips and money saving information. We find ourselves blessed with pantries that contain the food we need to feed our families. I would encourage everyone to take a little and share with those who many not find themselves in the same circumstance. You can drop your donations at any local Walmart or at one of the Utah Food Bank Locations anytime this Saturday September 24, 2011.
